Baahu is a counter in the food court of Westfield Mall of the Netherlands. The curries come out of the tandoor. The wraps and sandwiches come over the counter. Both halal, both fired fresh to order.

A tandoor is not an oven with a dial. The bread goes onto the glowing wall, the meat hangs in the heat, and what comes out has edges that are charred and a middle that is not. It is what Baahu is named for, and it is why the curries taste the way they do.
Everything on the menu is halal. Not part of it, not on request, not with an exception in the small print. That saves you the question you would otherwise have to ask every single time you order.
The kitchen is open. You watch the naan go into the tandoor and come back out, and that is the point of it. On the wall a cut-out mandala hangs between shelves of painted pottery, against slats and dark blue rope.
